Characteristics La Baixada
La Baixada is an ecological and biodynamic red wine made by Álvaro Palacios in the D.O.Q. Priorat with the Garnacha Tinta variety. Creator of the cult wine L'Ermita, Álvaro Palacios, needs no introduction. He is one of the main figures behind the resurgence of the D.O.Q. Priorat and the emergence of the D.O. Bierzo.
He is an intrepid winemaker whose wines triumph wherever they go. Under the premise of fully respecting the expression of nature itself, his wines are authentic works of art. La Baixada is a 1.3 hectare plot located in the town of Gratallops (El Priorat). It is planted with vines with an average age of 20 years old that grow on terraces 300 metres above sea level.
The slopes are very steep and the soils are composed of licorella, the slate soil that is typical of the area. The vines are cultivated using organic agriculture with biodynamic treatments and following the lunar cycles in each of the processes. Once the La Baixada grapes have been harvested manually, they are destemmed and lightly crushed.
They are then fermented with native yeasts in oak vats with 55 days of maceration. Finally, the wine is aged for 20 months in French oak barrels. La Baixada is Álvaro Palacios’ new wine made in the D.O.Q. Priorat. It is more refined than Finca Dofí and smoother than Les Aubaguettes. A very limited production with all the energy, subtlety and purity of a classic Priorat.
