Tasting Notes: Intense, dark ruby red with violet hues. On the nose, powerful with notes of blackberries, toffee and fudge. On the palate, soft, sweet tannins, round, balanced acidity, very good structure with black fruit and blueberry notes, a long and elegant finish.
Blend: 45% Cabernet Sauvignon, 45% Carmenere, 5% Syrah, 5% Petit Verdot.
Origin: Colchagua Valley. Carmenere, Cabernet Sauvignon and Petit Verdot from Los Lingues Estate. Syrah from Lolol Estate. Pre-selected micro-terroir plots.
Harvest: Grapes 100% hand picked in small trays, preselected in the vineyard.Vinification
Ageing: 100% aged in new French oak barrels for 12 months
Vinification:Grapes cooled down below 5oC upon arrival at the winery. Hand selection prior and post-destemming. Pre-fermentive maceration for 6 - 8 days at 6°C, depending on the variety. Alcoholic fermentation in 500 liters rotating barrels and in 1000 liters oak ponds for 15 to 17 days at 25o-28°C. Post ferment maceration for up to 15 days depending on daily tastings. Run off and then malolactic fermentation in used French oak barrels.
Food Pairings: Perfectly suited for fine meats such as venisson, wild board, duck or game, especially if well seasoned. It is the natural choice for roast lamb, fillet, a rack of ribs or beef Wellington. Also great served with Thai or Mediterranean dishes and with any kind of barbecued meats.
