Organically produced young vine Vermentino, with concentrated, mineral aromas of pears and oranges. Dry, vegetal and with hints of fennel and a firm, persistent herbal finish, this makes an excellent and unusual match for grilled fish, risotto, or maybe a cheese board.
Vinification: Grapes were picked by hand and the alcoholic fermentation was started with a pied de cuve. It took place in stainless steel tanks without temperature control.
Ageing: The wine refined in stainless steel tanks for 6 months for approximately 6 months. Not filtered.
